Chicken Florentine




Chicken Florentine
1lb Penne pasta
2 boneless, skinless Chicken Breast
Butter
Olive Oil
½ onion
½ red pepper
½ green pepper
½ button mushroom
Grape Tomatoes
Baby Spinach
1 cup Chicken Broth
½  Cup Cream


Directions
Cut  up the chicken into chunks,
Salt and pepper chicken
Brown chicken in large skillet( do not crowd pan, Brown in 2 batches)
Once chicken is brown remove from pan and place to the side
Add Mushroom
Add Green  and red pepper
Add Onion and cook until just tender
Add chicken broth scrape the bottom of pan to release the brown bits and cook for 4 – 5 minutes
Add cooked penne pasta and coat pasta with sauce
Add chicken back to pan
Remove from heat and stir in cream
Add Spinach
Add grape tomatoes, stir all together until spinach wilts
